MOLE

Sounds like "Ole", word we use to shout at bullfights, but "Mole" has nothing to do with bullfights.
Mole likes to dress in different colors: sometimes in red, some others in black or even yellow, and dependig on the color, you can know where he comes from.
For example: red Mole comes from Puebla, black and yellow Mole come from Oaxaca. Both cities are full of magic, history, and delicious ethnical food.
Mole is a very interesting character that has an enigmatic personality, because it´s full of mysterious ingredients such as: cinnamon, different types of chiles, and in some cases even chocolate!!!
Some recipes include over 20 ingredients.
If you want to meet Mole, you have to include tortillas, beans and sometimes rice, which are "Mole´s" best friends.
Also pairing Mole with a white Chardonnay wine is a wonderful experience you should not miss.
